Gault Millau Restaurants 2023

Updated on 21 November 2022

East Tyrol's recipe for success in the haute cuisine scene: ten restaurants in East Tyrol honoured by Gault Millau 2023 have been awarded nineteen toques, and the Gannerhof in Innervillgraten is also East Tyrol's first 4-toque restaurant. So much award-winning cuisine in such a small radius: this is only possible in East Tyrol.

The new Gault Millau Restaurant Guide 2023 once again ranks numerous East Tyrolean restaurants at the top of Austria's top gastronomy. Ten passionate chefs have been awarded a total of 19 toques. Josef Mühlmann, owner and chef at the Gannerhof in Innervillgraten, who was the first East Tyrolean business to be awarded four toques with his team last year, is a chef who is known far beyond the borders. The Gannerhof, which is over 300 years old, cooks according to the principle of short distances, which is why it is also famous for its traditional Alpine cuisine - presented and refined in an unusual way.

The Obwexer family's Rauterstube in Matrei has been decorated with at least one toque for an incredible 36 years. And this year it even has a premiere: 3 toques with 15 points crown the long history of toques at the Hotel Rauter. Classics such as "Kitz" and "Niggelen" can be found here, accompanied by a wine list known far beyond the borders. The Saluti in Matrei is the only pizzeria to have been awarded three toques by Gault Millau, paired with excellent Alpe-Adria cuisine. But landlord Ernst Moser plays far more than that. We're talking about espuma with truffles or pigeon with celeriac and apple puree. The enterprising host has already cooked at the Palais Schwarzenberg and the Hotel Imperial.

History and tradition find their way into the kitchen at the 2-toque restaurant "Das Pfleger" in Anras, as the Pfleggerichtshaus Schloss Anras is right next door and lies directly on the Pustertaler Höhenstraße. What's more, chef Tom Mascher is also a member of the Tiroler Wirtshauskultur. A new addition to the exquisite selection of top chefs and restaurateurs is the Monte Dinnerclub in Matrei, with 2-toque chef David Senfter at the forefront. A trendy restaurant in Alpine-Mediterranean style with a selected signature fine dining menu, creative bar food and cool drinks.

The Hotel Strasserwirt offers Austrian and international culinary delights, which can be described as an absolute temple of well-being with its special ambience and 2 toques. the restaurant "Im Stadl" in Nussdorf-Debant, which specialises in upscale, light and regional cuisine, is also "under the bonnet". The Parkhotel Tristachersee serves fresh fish from its own spring ponds every day, with huchen being served here as an insider tip - a trademark of the award-winning restaurant. Alternatively, right at the source, there is fish consommé with liver dumplings of Alpine salmon or "blue" carp with fresh horseradish.

The motto of the Jakobistube at the Jesacherhof Alpine Hotel in St. Jakob in the Defereggen Valley is "Connected to tradition". In addition to the spacious alpine wellness residence, the traditional hotel restaurant has once again made it into the elite of the culinary arts with its charm and dishes from its own hunting and fish farming. Not only the view through the large panoramic windows, but also what is served on the tables at the Gradonna Mountain Resort is a feast for the eyes and the palate. Down-to-earth cuisine looks beyond the horizon and meets international sophistication - perfectly conceived and prepared by award-winning chef Michael Karl and his team.

All East Tyrolean restaurateurs, whether alpine inns or award-winning restaurants, have one thing in common: they only use products of the highest quality, mostly from local, organic farming and species-appropriate animal husbandry. Anyone who has "tasted" their way through the fascinating natural surroundings and award-winning cuisine will be happy to recommend East Tyrol as a place to savour. "These are precisely the ingredients that currently characterise tourism in East Tyrol - a lot of unspoilt natural landscape away from mass tourism, a high standard of cuisine throughout the district, hospitality and dedicated families! Continued popularity goes hand in hand with an increase in quality and improved added value - the performance of the tourism industry cannot be rated highly enough," says TVB Chairman Franz Theurl.
